i had some free time today...
Banana Chocolate Chip Cookies
makes 20 cookies
1/2 c. coconut oil (should be the consistency of soft butter...not hard or melted!)
1/2 c. granulated sugar
1/2 c. brown sugar
1/2 of a banana, mashed & smooth
1 1/2 t. vanilla
1 c. all-purpose flour
3/4 c. bread flour
1 t. baking soda
1/4 t. salt
1 c. chocolate chips
1. Combine coconut oil, mashed banana, sugars, and vanilla, and beat on medium speed until light and fluffy. (2-3 minutes.)
2. Add flours, baking soda, salt, and mix until combined. (1 minute.)
3. Add in the chocolate chips and mix until incorporated.
4. Place dough on a Silpat mat and bake for 9-10 minutes at 400 degrees.
Enjoy!
