Not to brag or anything, but I scored major wife points with this Broccoli & Beef dish that we had for dinner tonight.  There's no doubt that it quickly became Ben's favorite thing I've ever made.  {Pardon the cell phone picture...it just couldn't go undocumented.} Next time you need a quick, easy, and delicious meal, make this and your stomach/your husband/your boyfriend/your dog/your guests/your friends will thank you!

Broccoli & Beef
Prep Time: 10 minutes + 1 hour for marinade Cook Time: 8 minutes

First, marinate the meat:
1/2 tsp baking soda
1 tsp sugar
1 tbsp cornstarch
1 tbsp low-sodium soy sauce
1 tbsp water
2 tbsp vegetable oil
1 1/2 lbs flank steak, sliced into thin strips

1. Whisk together the baking soda, sugar, cornstarch, soy sauce, water, and vegetable oil in a large bowl. Toss the steak with the marinade to coat. Cover and refrigerate at least 1 hour, then proceed below.

1/2 c low-sodium soy sauce (Do NOT use regular. The final product will be way too salty.)
2 tbsp brown sugar
4 cloves garlic, minced
2 tbsp flour
3 tbsp vegetable oil
2 heads broccoli, crowns only

1. In a small bowl, stir together the soy sauce, brown sugar, garlic, and flour until smooth. Set aside.
2. In a large wok or saute pan, heat 2 tablespoons of the vegetable oil over high heat until shimmering. Add broccoli and saute 3 minutes, stirring often. Transfer broccoli to a plate.
3. Reduce heat to medium-high. Carefully add the remaining tablespoon of oil to the hot pan. Add the marinated meat and half of the sauce mixture and saute for 3-4 minutes, stirring often, until the meat is cooked through and no longer pink. Stir in the broccoli and remaining sauce. Saute 1 minute more. Serve over rice.

we love visitors!


We were lucky enough to have my cousin who lives in Chicago come and visit last weekend.  If you know her, you know that she is a party and a half, so when you throw in some great food and late night chats until 5:30 am, you're living the dream. ;)  We tried to pack as much fun in as we could into the 1.5 days she was here, which explains the 3.5 hours of sleep on Friday night/early Saturday morning.  Thanks to the gorgeous weather, we were able to visit the temple, the art museum, the zoo, and the Missouri Botanical Gardens...and become Asian tourists and ride plastic sheep.  It happens.

My awesome cousin, Mandie, came down from Chicago to spend the weekend with us.  {More on that later.}  One of the things we did while she was here was an early morning trip to the temple.   There's just something special about going there first thing in the morning before you have a chance to think about much else.

we found indian mounds in Illinois.


There's this place in my heart that loves learning about cultures and groups of people and the way they lived.  When we heard about the indian mounds just 20 minutes from our place, I knew we had to go check them out, even if it meant kidnapping Ben and forcing him to come with.  (For the record, it only took a couple months of convincing to get Ben to go with me.  Museums aren't his thing. ;))  This past Saturday we realized we had nothing to do all afternoon, so we subjected our pasty white skin to the sun and hiked Monks Mound.  The view did not disappoint.  And Ben secretly thought the museum wasn't half bad.  ;)

vacations fly by too fast.

Our week long trip to Denver was such a breath of fresh air--literally and figuratively.  It was great to get away from work and school, and to spend time near the mountains.  (We've really been missing those tall, majestic beauties.)  Our week was full of family time (including a wedding!), hikes, good food, shopping, the Colorado History Museum, a temple trip, meeting up with an old friend, yard work, and more family time.  It was such a fun trip, which made going back to Missouri a little painful.  ;)

Happy birthday {yesterday} to this guy!!!  We started the day off right with doughnuts for breakfast and ended it with some Better Than Anything cake, so we pretty much had (still have?) sugar coursing through our veins.
