no-bake energy bites.

About a year ago, I discovered this healthy (read: semi-healthy) treat that is quick to whip up and is a great on-the-go snack.  I have no clue where this recipe came from, but I'm sure you could quickly find some variation on Pinterest or

No-Bake Energy Bites
(makes 18-20 bites)

1 cup oatmeal
1/2 cup peanut butter
1/3 cup honey
1 cup coconut flakes
1/2 cup ground flaxseed
1/2 cup chocolate chips
1 tsp vanilla

Mix everything together in a medium bowl and let chill in the refrigerator for 30 minutes.  Once chilled, roll into balls and enjoy.  Store in an airtight container and keep refrigerated for up to 1 week.
