Last night totally felt like a Friday evening as we showed two of Ben's cousins around St. Louis. Besides the obligatory trip to downtown and the Arch museum, we stopped for Italian food and frozen custard. The weather was perfect and the company was fantastic. And I don't know if I'm biased because I major heart pasta and carbs and all unhealthy food, but I'm pretty sure that every person in the world needs to eat at an Italian place on The Hill at least once in their life. So basically that's the point of this post. Come to St. Louis and I will show you where to find the best carbs out there. ;)

21 things i learned (and re-learned) during my 21st year of life.

Thanks to family and friends for making me feel like a million bucks yesterday! I had my hesitations about leaving 21 behind, but we're one day in and so far so good. ;)

It's okay to spend Friday night at home with no plans.
Getting laid off is no fun.
I can be in a hospital/around blood and not pass out.
Pray, pray, pray.
Cooking is actually fun.
Baking is even more fun.
Don't do business with people you know well.
Doing new things is good for you.
Traveling with your spouse is awesome.
Clothes and makeup don't bring happiness, but they kinda really do at the same time.
People like it when you remember small details they've mentioned.
The best things in life take a lot of work.
Choose good landlords.
Teaching a Primary class can be really frustrating and rewarding.
Sometimes you just need some froyo.
Date nights are the best nights.
Things will always work out.
Spontaneous plans make way better stories.
Peanut butter is delicious.
Stand by what you believe in and don't let others convince you otherwise.
Take a deep breath and start over.

I find it comforting that God knows ME.  He knows the intentions of my heart--my spiritual, physical, mental, and emotional aspirations and efforts.  How great it is that He watches over me and directs the small and big things in my life every day because He knows me perfectly.  He knows who I am - who I want to be - and who I will become.

homemade chocolate buttercream frosting.


There are lots of homemade chocolate frosting recipes out there, but this one is by far my favorite!  It's simple, it's easy, and it tastes 50 times better than frosting from a can.

Chocolate Buttercream Frosting
1 c. butter
1/2 c. unsweetened cocoa
4 c. powdered sugar
3 T. whipping cream
1 1/2 t. vanilla

Cream your butter until smooth.
Add the rest of the ingredients.
Mix until blended.
Add extra powdered sugar in 1/2 c. increments if needed. (Mine was a little runny so I ended up adding an extra cup of powdered sugar.)

Enjoy!

(PS - One of my favorite ways to eat this is spread on a graham cracker. :))

growing takes some time.


I heard this phrase not too long ago, but it's one that I've been mulling over for the longest time.  (If that even makes sense?)

This past weekend I planted a few little plants.  I bought containers, plants, soil, and even a little watering can.  As I dug the holes for each plant and placed them in the soil, I thought about the quote above.  As I patted down the soil around the little plants and watered them, I thought about the quote above.  As I placed the containers in sun-lit areas, again, I thought about the quote.

As much as I reeeeeally want my plants to grow and start producing immediately (hello, homemade salsa!), I know that it isn't realistic.  I also know that there are things necessary to the success of my teeny, tiny garden--those things work together to create success over time.

I'd venture to say that it's pretty easy to look at baby plants and have patience; however, it's harder to look at things of more importance and have patience.  I'm guilty of it.  Actually, super guilty of it!  There are days I get frustrated with XYZ because it's not perfect now, or not happening in my life now.  When I take a step back, it's clear that I've been trying to rush situations.

At this point in my life, most situations I'm in are in the growing stage.  I'm working on remembering that it takes time for tomato plants to grow and produce results just the same as an education, career, marriage, etc., and that there are small things working together to create success.

All of the best things in life just get better with time, right? :)

U T A H // Part 2

We met up with our cousin who is currently an EFY counselor at BYU and got to chat with her for a bit. :)
Hiked to Donut Falls up Big Cottonwood Canyon (I'd highly recommend it for all ages and activity levels).  It was beautiful and so great to be back in nature!
We spent our Family Home Evening out at the driving range.
One of the things we did on Ben's birthday was hike up Timpanooke Trail to the waterfall.  It was definitely a harder hike than Donut Falls, but relatively, not too steep of a trail.  The views were great and we even came across some snow that hadn't yet melted!
Ben requested Funfetti cake with homemade chocolate frosting for his birthday treat, and it was surprisingly ten times better than it sounds!  Also, how fun are those birthday candles? :)

U T A H // Part 1

Our trip to Utah was so much fun!  We spent quite a bit of time outdoors, saw family and friends, and ate way too much (Cafe Rio twice!).  We celebrated two birthdays, watched a few movies, discovered some new snow cone shacks, baked some sweets, did some shopping, and stayed up late more nights than not.  The best part was just spending time together with each other!  Now for the first part of my photo dump... ;)
Graduation. Lots of air horns, flower leis, and quotes about inches and miles.  And Mexican food after to celebrate!  (Hey, Mom.  Two down, three to go!)
Sister and I drove up the canyon and stopped to check out the reservoir.  The weather was perfect!
I took too many panoramas whilst in Utah.  Growing up in the Beehive State, I always knew it was beautiful and awesome, but going back this time, I could help but think Wow! each time I saw the mountains.  I promise to try to not post as many panoramas in the next post!

unexpected discoveries about Missouri.

I have no clue where this picture was taken because I didn't take it.  And it looks more like Illinois than Missouri, haha.

My mom and I were talking a few weeks ago about St. Louis.  I told her that sometimes I have these moments where I'll be walking to my car after class, or driving on the freeway after going grocery shopping, where I think Oh my gosh.  I live in St. Louis...I live in Missouri.  And not that I consider it a bad thing!  I just never imagined that I'd be living in Missouri one day.  In fact, if you had asked me a few years ago where St. Louis is and what's there, I would've had to stop and think for a minute or two.

I knew St. Louis was in the Midwest/Northwest somewhere, but I definitely didn't know it's right on the Mississippi River.

I wasn't expecting extremely humid summers and so many rainy days.  I also wasn't expecting so little snow in the winter.

I didn't realize that St. Louis has socio-economic and racial diversity.

I thought Missouri was going to look an awful lot like Kansas--flat, brown, and empty.  (It's actually hilly, green, and has a lot to offer.)

I didn't know that there are so many "big" cities within 4 hours from here (Nashville, Memphis, Kansas City, Louisville, and Indianapolis), and even more 5-6 hours away (Lexington, Cincinnati, Chicago, Oklahoma City, Little Rock, and Des Moines).

I wasn't expecting so many drivers that go 5 mph below the speed limit and never use their blinkers. ;)

I didn't know that I would enjoy being in a small ward as much as I do.  So many service opportunities and chances to teach investigators with the missionaries have come my way, that I feel so blessed!

I really love that there are so many new things to explore and discover nearby, and it makes me excited to figure out over the next few years where we'll end up next!  It sure keeps life exciting. :)
